Szechuan Vegetable Fingers Recipe
Ingredients:
- cabbage : 1 cup grated
- carrot : 1 diced
- potatoes : 2 medium sized boiled & mashed
- garlic : 1 tsp
- onion : 1 tbsp chopped
- Schezwan sauce : 2 tsp
- green capsicum : 1 chopped
- soy sauce : 1 tbsp
- white flour : 2 tbsp
- eggs : 1
- bread crumbs : 1 cup
- oil to fry
- salt and pepper to taste
Method:
Heat 2 tbsp oil in a nonstick pan and saute garlic. Now add all vegetables and mix well.
Add Schezwan sauce, soy sauce, salt and pepper and cook for a few minutes. Now add potatoes to the mixture and remove form heat. Place the mixture in a bowl. In another container beat egg with flour. Shape potato mixture in fingers. Dip all fingers in egg mixture and then roll in bread crumbs. Heat oil in a sauce pan. Deep fry fingers and serve with the sauce.
